Weight watcher butter cookies

Makes: 20 cookies

Points: 1 point each (most plans)

🧈 Ingredients

  • 1 cup all-purpose flour
  • 3 tbsp light butter (I Can’t Believe It’s Not Butter Light)
  • 3 tbsp unsweetened applesauce
  • ¼ cup zero-calorie sweetener (Swerve, Monk Fruit, etc.)
  • 1 tsp vanilla extract
  • 1 egg white
  • Pinch of salt

🍪 Instructions

1. Make the dough

  • In a bowl, cream together light butter + sweetener.
  • Add egg white, vanilla, and applesauce and mix until smooth.
  • Add flour + salt and mix until soft dough forms.

2. Shape the cookies

  • Chill dough for 20 minutes (helps low-fat dough hold shape).
  • Roll into 20 small balls and flatten slightly with fingers or fork.

3. Bake

  • Preheat oven to 350°F (175°C).
  • Bake 8–10 minutes until edges are lightly golden.
  • Cool before removing from tray.

✨ Tips to Keep Points Low

  • Using applesauce reduces the amount of butter needed
  • Light butter keeps the buttery flavor without heavy points
  • Swerve/Monk Fruit keeps it sugar-free
  • Make small cookies for portion control
