- 3 tbsp unsweetened applesauce
- ¼ cup zero-calorie sweetener (Swerve, Monk Fruit, etc.)
- 1 tsp vanilla extract
- 1 egg white
- Pinch of salt
🍪 Instructions
1. Make the dough
- In a bowl, cream together light butter + sweetener.
- Add egg white, vanilla, and applesauce and mix until smooth.
- Add flour + salt and mix until soft dough forms.
2. Shape the cookies
- Chill dough for 20 minutes (helps low-fat dough hold shape).
- Roll into 20 small balls and flatten slightly with fingers or fork.
3. Bake
- Preheat oven to 350°F (175°C).
- Bake 8–10 minutes until edges are lightly golden.
- Cool before removing from tray.
