Ingredients
- 1 box sugar-free yellow cake mix about 15.25 oz
- 1 can 12 oz diet lemon-lime soda (such as Diet Sprite or Diet 7Up)
- 1 package 0.3 oz sugar-free strawberry simply delish gel sugar free strawberry jel
- 1 cup fresh strawberries sliced
- 1 container 8 oz fat free whipped topping (such as Cool Whip Light)
- 1/4 cup sugar-free strawberry jam optional for extra flavor

- Instructions
- Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick spray.
- Make the cake:
- In a large bowl, combine the sugar-free cake mix with the diet soda. Stir well until there are no lumps.
- Pour the cake batter into the prepared baking dish and spread evenly.
- Bake according to the package instructions (usually 25-30 minutes), or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool for about 15 minutes.
- Poke the cake: Using the end of a wooden spoon or a skewer, poke holes all over the top of the cake while it’s still warm.
- Prepare the Jel
- In a small bowl, dissolve the sugar-free strawberry Jel powder in 1 cup of boiling water. Stir well and let it cool for a few minutes.
- Once cooled, pour the Jel mixture evenly over the cake, making sure it seeps into the holes. Let the cake cool completely at room temperature, then place it in the fridge for at least 2 hours to set.
