Method
- Sift powdered sugar and cocoa together. Beat cream cheese until smooth, then beat in the sifted mixture, vanilla, and salt.
- In a clean cold bowl, beat cream to firm peaks. Fold one quarter into the chocolate base to loosen it, then fold in the remainder in two additions.
- Reserve 2 tablespoons brownie crumbs. Fold the rest gently into the mousse.
- Divide among eight cups, cover, and chill 2 hours. Add reserved crumbs immediately before serving.
Technique and troubleshooting
Soft cream cheese prevents lumps, but it should not be melted. Cold cream traps air more effectively. Stop whipping when peaks hold; grainy cream is beginning to turn to butter. Sifting cocoa matters because dry pockets are difficult to remove after the cream is folded in.
Use fully cooled, plainly frosted or unfrosted brownies. Warm crumbs melt the mousse, while heavily iced brownies alter the measured sweetness and texture. Fold rather than stir to preserve volume. If the base is stiff, the first portion of cream should make it workable; do not add unmeasured milk.
Serving and substitutions
Set all eight cups out before portioning and fill them in rotation for an even yield. Fresh raspberries can replace the final crumb garnish, but are separate from the base formula. Mascarpone can replace cream cheese by weight for a milder flavor. Dutch-process cocoa is usable here because there is no chemical leavener, though it tastes darker.
Storage and safety
Keep covered at 40°F or below and use within 3 days. Do not leave dairy mousse at room temperature longer than 2 hours, or 1 hour above 90°F. Transport in a chilled carrier. Freezing is not recommended because the dairy foam and brownie pieces can become grainy or soggy after thawing.
Portioning and presentation
Place all eight cups on the counter before filling. Add one spoonful to each in rotation so brownie pieces and mousse are distributed rather than settling into the first cups. Wipe cup rims before covering. For a defined layered look, reserve half the crumbs for the middle: add mousse, crumbs, and the remaining mousse without pressing down.
If making brownies specifically for this dessert, cool them completely and weigh four ounces after baking. Edge pieces create firmer flecks; center pieces blend more softly. Either works, but mixing both gives a balanced texture.
