Here’s a Weight Watchers-friendly cottage cheese NO BAKE protein packed cookie dough recipe that’s low in points and high in protein. This recipe makes a no-bake dough that’s safe to eat and perfect for a healthy treat. Two weight watchers points per 1/2 cup serving!!
Ingredients
- 1/2 cup fat-free cottage cheese
- 1/4 cup almond flour or oat flour for a different texture
- 2 tbsp powdered peanut butter like PB2
- 1 –2 tbsp sugar-free sweetener of choice like Stevia or monk fruit
- 1 tsp vanilla extract
- 70 mini lilys dark chocolate chips use sugar-free or dark chocolate for fewer points
- Pinch of salt
Instructions
- Blend the cottage cheese in a food processor until smooth and creamy.
- Transfer the cottage cheese to a mixing bowl and stir in the almond flour, powdered peanut butter, sweetener, vanilla extract, and salt.
- Mix until it forms a dough-like consistency. Add more almond flour if the mixture is too sticky.
- Fold in the mini chocolate chips.
- Chill in the refrigerator for 15–20 minutes to firm up, then enjoy!
