Ingredients

  • 1 cup plain non-fat Greek yogurt
  • 1/3 cup granulated zero-calorie sweetener (Monkfruit, Splenda, etc.)
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1 cup self-rising flour
    (or 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)
  • 2 tbsp mini chocolate chips
  • Optional: a sprinkle of cinnamon or espresso powder for richer flavor

  1. Preheat oven to 350°F / 175°C and line an 8×8 pan with parchment.
  2. In a bowl, whisk together Greek yogurt, sweetener, vanilla, and egg whites.
  3. Add the flour and gently fold until combined — don’t over-mix.
  4. Stir in the mini chocolate chips.
  5. Spread batter evenly into the pan.
  6. Bake 18–22 minutes, until the center is set and edges are lightly golden.
  7. Let cool completely, then slice into 16 small bars.
