Low-Point Mayo & Parmesan Chicken

Points (approx):

• 0–1 point per serving using light mayo

• 2–3 points per serving using regular mayo

(Exact points depend on your WW plan and brands)

Ingredients

  • 1 lb boneless, skinless chicken breast (4 pieces)
  • 3 tbsp light mayonnaise (Best Foods/Hellmann’s Light works great)
  • 2 tbsp grated Parmesan (the finely grated kind, not shredded)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Optional: Italian seasoning or onion powder

Instructions

  1. Preheat oven to 400°F (205°C) or air fryer to 380°F.
  2. Pat chicken dry.
  3. In a small bowl, mix mayo, Parmesan, and seasonings.
  4. Spread a thin, even layer over the top of each chicken piece.
  5. Place on a lined baking sheet or air fryer basket.

Bake:

  • Oven: 20–25 minutes, until cooked through
  • Air fryer: 12–15 minutes, flipping once

(Optional: broil 1–2 minutes at the end for extra browning.)

Tips to Keep Points LOW

  • Use light mayo only (this makes the biggest difference)
  • Measure Parmesan carefully (a little goes a long way)
  • Serve with zero-point sides like roasted veggies, salad, or cauliflower mash

Flavor Variations (no extra points)

  • Lemon zest + garlic
  • Ranch seasoning (check label)
  • Smoked paprika + black pepper
