Fried Cabbage with Onions and Bacon
Ingredients
- 4 cups shredded green cabbage
- 1 medium onion, sliced thin
- 3 slices center-cut bacon, chopped (lean, reduced-fat if available)
- 1–2 tbsp water or low-sodium broth (as needed for sautéing)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- Salt to taste (go light — bacon already adds salt)
- Optional zero-point boosts: chopped mushrooms, zucchini, or a splash of apple cider vinegar
Instructions
- Cook the bacon in a large pan over medium heat until crisp.
- Remove bacon pieces and set aside.
- Leave about 1–2 tsp of bacon drippings in the pan (discard the rest if there’s more).
- Add the onion to the pan and cook 3–4 minutes until soft.
- If it starts to stick, add a tablespoon of broth or water instead of oil.
- Add cabbage, paprika, garlic powder, pepper, and optional veggies.
- Stir, cover, and cook 8–10 minutes until tender, stirring occasionally.
- Stir the bacon back in, taste, and adjust seasoning.
- Let it sit a minute off the heat so flavors deepen — then serve warm.
