Double chocolate banana muffins

1sp Double chocolate banana muffins prepped for the week! 🍫 🍌 🧁
I just used my 1sp banana bread recipe and tweaked it a bit to create these and they turned out so good!
Here’s what I used:
3/4 cup of all purpose flour
1/3 cup of unsweetened cocoa powder
12 ounces of ripe banana
1/4 cup of monkfruit sweetener
1/4 cup of almond milk
1/4 cup of egg beaters (or 1 egg)
1 tsp of baking powder, 1/2 tsp of baking soda, 1/4 tsp of salt
1 tbsp of land o lakes butter
14 grams of lily chocolate chips
Here’s what I did:
In one bowl I mixed:
12 ounces of mashed bananas
1/4 cup of unsweetened almond milk
1/4 cup of egg beaters
1/4 cup of monkfruit sweetener (or your choice of sugar)
1 tbsp of melted land o lakes light butter
Then in another bowl mix:
The flour, cocoa powder, baking powder, baking soda and salt together
Mix together the dry ingredients with wet ingredients.
Mix in the lily chocolate chips to the batter
Spray your muffin pan with oil and fill evenly
These make 12 regular size muffins at 1sp each
20 minutes at 350° or until done
