This Creamy Italian Chicken is one of those dishes that the entire family will enjoy! Serve as is-with your favorite veggie-or on top of a low-point pasta for a complete meal.

Ingredients

  • 1 lb. frozen or fresh boneless skinless chicken breasts or tenders
  • 1/2 cup water
  • 1 tsp minced garlic
  • 1 (.7 oz. ) packet of dry Italian dressing mix ( I use Good Season’s  )
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 4 oz. 1/3 less fat cream cheese ( room temperature) 
  • 1 ( 10.5 oz.) Healthy Request cream of chicken soup, not diluted.
  • Pinch of fresh or dry parsley, for garnish

Instructions

Instant Pot Directions:

If using noodles, cook noodles as directed on back of the package and set aside. 
Meanwhile, add water and the chicken breasts/tenders to the bottom of the Instant Pot. 
Add water, cream of chicken soup, Italian seasoning, garlic, salt and black pepper.
Place lid on the Instant Pot and turn valve to sealing. Select high pressure and set the timer to 8 minutes. The pressure cooker will take about 10 minutes to build pressure. 
Once it’s over, turn the Instant Pot off and let pressure release naturally for 5 minutes and then open the lid.
Shred chicken using two forks. Keep chicken and liquid in Instant Pot.
Turn the Instant Pot to sauté. 
Whisk in cream cheese and continue whisking until cream cheese has dissolved.
Serve over rice, whole wheat noodles, or low point noodles such as Al Dente Carba-Nada Egg Fettuccine.

Slow Cooker Directions:

Cook noodles as directed on back of the package and set aside. 
Meanwhile, place chicken breasts at the bottom of the slow cooker. 
Add water, cream of chicken soup, Italian seasoning, garlic, salt and black pepper.
Cook on low for 4-6 hours or 3 hours on high. Turn slow cooker off. 
Shred chicken using two forks. Whisk in cream cheese and continue whisking until cream cheese has dissolved.
Serve over rice, whole wheat noodles, or low point noodles such as Al Dente Carba-Nada Egg Fettuccine.
