Chewy Chocolate Chip Cookies

Ingredients:
• 1/2 cup unsweetened applesauce (zero points) • 1/4 cup brown sugar substitute (like Swerve Brown or Lakanto Golden) • 1 tsp vanilla extract • 1/4 tsp salt • 1/2 tsp baking soda • 3/4 cup all-purpose flour (or 1:1 gluten-free baking flour) • 1/4 cup mini semi-sweet chocolate chips (Lily’s or Enjoy Life for lower points) ⸻
Optional Add-ins (if you have points to spare): • 1 tbsp peanut butter powder (adds richness) • Dash of cinnamon or espresso powder for depth ⸻
Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or spray lightly with nonstick spray.
2. Mix applesauce, brown sugar substitute, and vanilla in a bowl until smooth.
3. Add flour, baking soda, and salt. Stir until combined — the dough will be soft but should hold shape. 4. Fold in mini chocolate chips.
5. Scoop dough (about 1 tbsp per cookie) onto prepared baking sheet. Flatten slightly with wet fingers or the back of a spoon.
6. Bake for 9–11 minutes, or until edges are just golden. Cookies will set more as they cool.
