Blueberry Lemon Cupcakes

I just made blueberry lemon cupcakes and they are so good! And at just two weight watchers points each they are a great low point snack! 

Freeze extra cupcakes and reheat them in the microwave for 20 to 30 seconds whenever you’re ready to enjoy.

Ingredients

  • 1 sugar free yellow cake mix (as pictured)
  • 1 egg
  • 1 scoop of Isopure protein powder (1 pt)
  • 1 cup of Greek yogurt (2 pt)
  • 1 can of no sugar 7Up
  • 1 tsp lemon zest
  • Dash of lemon flavoring or fresh lemon juice
  • 1 cup of blueberries

Instructions 

  • Preheat the oven to 375°F. Line a 24 cup muffin pan with paper liners (or use a silicone muffin pan).
  • Divide the batter among the prepared muffin cups. Bake until a tester inserted into the centers comes out clean, about 15 minutes.
  • Serve warm or at room temperature.
