Black Bean Burger
Thanks to michael for sharing this recipe with us! I don’t think I’ve ever been so surprised by a recipe in my life, never thought I would like this but I devoured it!!
Did I mention it’s a total of 4 weight watchers points for the finished burger?
Got the idea on From this youtube recipe and made a couple changes. One thing was recipe said it made 4 burgers, way too big in my opinion so from now on it’s gonna be 6 burgers.
I decided to use Thomas light English Muffins instead of rolls and I also felt it needed a sauce so I came up with this Spicy Mayo.
If you like heat then make the recipe as is, if you want a mild heat leave out the cayenne, for no heat leave out the cayenne and maybe find a mild sauce to use. This was so packed with flavor, like chili meets black bean soup meets burger. Blew my mind!! Oh and I think next time I may make these in my air fryer for a more even cook and crisp.
Ingredients
- 2 cans black beans rinsed and drained
- 1 onion minced
- 3 cloves garlic minced
- 2 carrots shredded
- ½ cup quick-cook oats
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon cumin
- ½ teaspoon coriander
- ½ teaspoon chili powder
- ¼ teaspoon cayenne pepper
- salt to taste
- pepper to taste
- 6 Light English Muffins
- 4 Tablespoons light mayo
- 2 Tablespoons Chili Garlic Sauce
- 1 Tablespoon hot sauce
Instructions
- Heat one tablespoon of olive oil in a pan. Combine onions, garlic, salt, and pepper and cook until onions are translucent. Add carrots, cumin, coriander, chili powder, and cayenne pepper until carrots are tender. Remove pan from heat. In a bowl mash the beans and then add the contents of the pan along with the soy sauce and quick oats. Mix and form 6 patties. Place in freezer for 30 minutes to set. Cook patties in a pan coated in cooking spray over medium heat, flipping halfway. While burgers are cooking combine ingredients for spicy mayo. Toast english muffins and build your burgers.
