Beef and Broccoli

🛒 Ingredients

  • 16 oz extra lean beef (96–98% lean ground beef OR very lean sirloin, thin sliced)
  • 4 cups fresh broccoli florets (ZeroPoint 🥦)
  • 3 cloves garlic, minced (ZeroPoint)
  • 1 tsp fresh grated ginger (optional but 🔥 flavor)
  • ¼ cup low-sodium soy sauce
  • 1 tbsp oyster sauce (optional – 1 point total)
  • ½ cup beef broth (fat-free)
  • 1 tsp cornstarch (1 point total – optional for thickening)
  • Cooking spray
  • Red pepper flakes (optional)

👩‍🍳 Instructions

  1. Spray large skillet with cooking spray.
  2. Cook beef until browned. Drain if needed.
  3. Remove beef and set aside.
  4. In same pan, add broccoli + 2–3 tbsp water. Cover and steam 3–4 minutes.
  5. Add garlic + ginger, cook 30 seconds.
  6. Mix broth + soy sauce + cornstarch (if using).
  7. Return beef to pan and pour sauce over.
  8. Simmer 2–3 minutes until slightly thickened.

🔥 How To Make It EVEN Lower Points

  • Use 96–98% lean beef
  • Skip oyster sauce
  • Skip cornstarch (sauce will be thinner but still flavorful)
  • Add mushrooms or zucchini for more volume

🍚 Serve It With

  • Over steamed broccoli (0 points)
  • Over cauliflower rice (0 points)
  • Or ½ cup brown rice (adds points depending on plan)
