- 1 1/2 cups graham cracker crumbs

Method
- Mix the graham crumbs, melted butter, and granulated sugar until every crumb looks damp. Press the mixture firmly across the base and up the sides of a 9-inch pie plate. Refrigerate the crust while preparing the filling.
- Beat the softened cream cheese until completely smooth. Add the peanut butter, powdered sugar, and vanilla, then beat again until uniform. Scrape the bowl, especially along the bottom, so no streaks of cream cheese remain.
- In a clean bowl, whip the cold cream to firm peaks. Fold one-third into the peanut butter mixture to loosen it. Fold in the remainder gently, stopping when the color is even and the filling still looks airy.
- Spread the filling in the chilled crust without compressing it. Smooth the top, cover, and refrigerate for at least 4 hours. Add peanuts just before serving, if using.
Texture cues and troubleshooting
The crumb mixture should clump when squeezed. If it remains sandy, keep mixing until the butter is distributed rather than adding unmeasured liquid. Cream cheese must be soft enough to beat smooth; cold lumps will remain visible after the whipped cream is folded in. Conversely, keep the whipping cream cold so it can trap enough air. Fold with broad strokes and avoid vigorous stirring, which can make the finished pie dense.
For neat portions, chill the pie fully and wipe the knife between cuts. If the first slice bends rather than lifting cleanly, return the pie to the refrigerator for another hour. This is a refrigerated dessert, not a counter-set pie.
Substitutions and storage
Chocolate wafer crumbs can replace the graham crumbs in the same measured amount. Smooth sunflower seed butter is a peanut-free alternative, though the flavor and firmness will differ. Do not replace the block cream cheese with whipped spread, which contains more air and may make the filling too soft.
Cover and refrigerate the pie promptly. Keep it at 40°F/4°C or colder and use within 4 days. Do not leave dairy-based pie at room temperature for more than 2 hours, or 1 hour when the temperature is above 90°F/32°C. Individual slices may be frozen airtight for up to 1 month and thawed overnight in the refrigerator.
