These banana chocolate chip protein muffins use Kodiak pancake mix for structure and three ripe bananas for moisture. The batter is lightly sweetened and makes a convenient breakfast or snack. Ingredients
- 1 1/3 cups Kodiak pancake mix
- 1/2 cup water
- 3 eggs
- 90 Lily’s baking chips
- 3 very ripe bananas
- 1 teaspoon vanilla extract
- Cinnamon, to taste
- 3 packets Splenda
Instructions
- Preheat the oven to 350°F. Prepare a muffin pan with liners or cooking spray.
- Mash the bananas in a large bowl until mostly smooth.
- Whisk in the eggs, water, vanilla, Splenda, and cinnamon.
- Add the pancake mix and stir just until no dry streaks remain.
- Fold in the measured baking chips, distributing them through the batter.
- Portion the batter evenly into the prepared muffin cups.
- Bake for 15–20 minutes. Check that the centers are set before removing the pan from the oven. Cool briefly in the pan, then transfer the muffins to a rack.
Preparation Tips
