Blueberry Lemon Bread

🛒 Ingredients
Dry Ingredients
1 cup vanilla or unflavored whey or plant protein powder
1 cup white whole wheat flour (or oat flour)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
Wet Ingredients
1 cup plain Greek yogurt (0–2%)
2 large eggs
⅓ cup honey or maple syrup
2 tbsp melted coconut oil or light butter
Zest of 2 lemons
3 tbsp fresh lemon juice
1 tsp vanilla extract
Add-Ins
1 cup fresh or frozen blueberries
1 tbsp flour (for coating blueberries)
👩‍🍳 Instructions
Preheat oven to 350°F (175°C). Line or grease a 9×5 loaf pan.
In a bowl, whisk together all dry ingredients.
In another bowl, mix yogurt, eggs, honey, oil, lemon zest, lemon juice, and vanilla until smooth.
Slowly combine wet and dry ingredients (don’t overmix).
Toss blueberries in 1 tbsp flour (prevents sinking), then gently fold into batter.
Pour into loaf pan and smooth top.
Bake 40–50 minutes, or until a toothpick comes out clean.
Cool 15 minutes in pan, then transfer to rack.
🍋 Optional High-Protein Lemon Glaze
¼ cup vanilla protein powder
1–2 tbsp lemon juice
1–2 tbsp Greek yogurt
Mix until thick but pourable. Drizzle once bread cools.
