π§ Potato & Meatball Bake (Lightened Up)
β¨ Ingredients:
- 3 large potatoes, peeled & thinly sliced
- 1 small white onion, finely chopped
- 300g lean ground meat (chicken or turkey for lower points)
- 2 cloves garlic, minced
- 1 egg
- 2 tbsp breadcrumbs (or oats for lower points)
- Salt & black pepper
- 1 tsp paprika
- 1 tsp dried parsley
- Β½ cup low-fat shredded mozzarella
- Β½ cup tomato sauce (no sugar added)
- Cooking spray
π©βπ³ Instructions:
- Preheat oven to 180Β°C (350Β°F). Lightly spray a baking dish.
- Prepare the meatballs:
In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, and spices.
Form into small meatballs. - Slice potatoes thinly (this helps them cook evenly).
- Assemble:
- Arrange potato slices and meatballs alternately in the dish (like in the photo).
- Pour tomato sauce evenly over the top.
- Bake covered with foil for 35β40 minutes until potatoes soften.
- Add cheese and bake uncovered for another 10β15 minutes until golden and bubbly.
