Weight Watchers American Goulash

Ingredients
- 1 lb 96% lean ground beef
- 1 cup uncooked elbow macaroni
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup beef broth (fat-free)
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a large pot, cook the lean ground beef over medium heat until browned. Drain any excess liquid.
- Add onion and garlic and cook for 2–3 minutes until softened.
- Stir in diced tomatoes, tomato sauce, beef broth, paprika, and Italian seasoning.
- Add the uncooked macaroni and mix well.
- Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.
- Season with salt and pepper, garnish with parsley, and serve warm.
Optional (still low points)
- Sprinkle 1 tbsp reduced-fat shredded cheese on top (+1 point).
