Low-Point Mayo & Parmesan Chicken

• 0–1 point per serving using light mayo
• 2–3 points per serving using regular mayo

Ingredients
- 1 lb boneless, skinless chicken breast (4 pieces)
- 3 tbsp light mayonnaise (Best Foods/Hellmann’s Light works great)
- 2 tbsp grated Parmesan (the finely grated kind, not shredded)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & pepper to taste
- Optional: Italian seasoning or onion powder
Instructions
- Preheat oven to 400°F (205°C) or air fryer to 380°F.
- Pat chicken dry.
- In a small bowl, mix mayo, Parmesan, and seasonings.
- Spread a thin, even layer over the top of each chicken piece.
- Place on a lined baking sheet or air fryer basket.
Bake:
- Oven: 20–25 minutes, until cooked through
- Air fryer: 12–15 minutes, flipping once
(Optional: broil 1–2 minutes at the end for extra browning.)
Tips to Keep Points LOW
- Use light mayo only (this makes the biggest difference)
- Measure Parmesan carefully (a little goes a long way)
- Serve with zero-point sides like roasted veggies, salad, or cauliflower mash
