WW Chicken Tortilla Soup

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts — shredded
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 (15 oz / 425 g) can diced tomatoes (no salt added if possible)
  • 1 (15 oz / 425 g) can black beans, drained & rinsed (optional — adds a bit of points)
  • 1 (15 oz / 425 g) can corn, drained (optional)
  • 4 cups (about 950 ml) low‑sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt & pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped for garnish

Optional low‑point toppings:

Crushed baked tortilla strips, a squeeze of lime, chopped cilantro — count these in your Points.

Instructions

  1. Sauté aromatics:
In a large pot over medium heat, add the onion and garlic. Cook until softened.
  2. Add main ingredients:
Add the shredded chicken, tomatoes, beans, corn, chicken broth, cumin, chili powder, salt and pepper.
  3. Simmer:
Bring to a boil, then reduce heat and simmer 15–25 minutes until flavors meld.
  4. Finish & serve:
Stir in lime juice, garnish with cilantro, and serve hot. Add a few baked tortilla strips if you like.

Approximate WW Points

Points will vary by plan (Blue/Green/Purple) and toppings, but typical estimates are:

• ~1–4 Points per serving without heavy toppings (like cheese, sour cream, or fried chips).

Tips to keep Points low:

  • Skip or reduce tortilla chips — baked strips are lower than fried.
  • Use plenty of veggies and broth — they’re ZeroPoint and hearty.
  • Skip cheese or sour cream, or use a light Greek yogurt substitute (track in app).

🧠 Pro Tip

For ultra‑low‑point version, omit beans and chips entirely — you’ll mostly rely on broth, chicken, tomatoes, and herbs, keeping most of it ZeroPoint (except any used oil or toppings) depending on your plan.
