Method

  1. Reserve 2 tablespoons pistachios for garnish. Process the remainder until finely ground but stop before it becomes nut butter.
  2. Combine ground pistachios and 2 cups milk in the saucepan. Heat over medium until steaming. Remove from heat, cover, and steep 10 minutes.
  3. Whisk sugar, cornstarch, yolks, salt, and remaining 1/2 cup cold milk in a bowl until smooth.
  4. Slowly whisk 1 cup warm pistachio milk into the yolk mixture. Return it all to the saucepan. Cook over medium-low, stirring and scraping continuously, until slow bubbles break the surface and the pudding reaches 175–180°F. Cook 1 minute more.
  5. Remove from heat; stir in vanilla, almond extract, and butter. Strain, pressing gently on the nut solids without forcing coarse pieces through.
  6. Divide among six cups and cover each surface directly. Refrigerate within 2 hours and chill at least 3 hours. Chop the reserved nuts and add immediately before serving.

Steeping transfers pistachio flavor to the milk. Cornstarch thickens the liquid; yolks add emulsifying power and richness; butter softens the chilled gel. Troubleshooting

If the nuts form a paste in the processor, they were run too long; start again because nut butter changes the fat balance. Lumpy pudding results from adding starch to hot milk without first making the cold slurry, or from insufficient stirring. Strain while hot. If thin, return it to gentle heat and verify the temperature; never stir dry cornstarch into finished pudding. A scorched batch cannot be repaired.

Substitutions and serving

Two percent milk can replace whole milk for a lighter body. Vanilla may replace the almond extract, increasing the total vanilla to 3/4 teaspoon. Roasted unsalted pistachios may replace raw nuts, creating a deeper toasted flavor. Salted nuts, instant pudding mix, plant milk, and other starches are not direct substitutions because their salt, sugar, protein, or thickening behavior differs.

Storage and safety

Keep covered at 40°F or below and use within 4 days. Do not freeze. Discard after more than 2 hours at room temperature, or 1 hour above 90°F. This recipe contains pistachio, milk, and egg; almond extract can also be unsuitable for some nut-allergic diners. Prevent shell contact with egg contents and cook to the stated range.
