Weight Watchers Cozy Chicken & Dumplings

Ingredients
For the soup base:
- 1 lb (450g) skinless boneless chicken breast, cubed
- 1 ½ cups chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups fat-free low-sodium chicken broth
- 1 ½ cups unsweetened almond milk (or skim milk)
- 1 tbsp olive oil (or cooking spray)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp thyme
- ½ tsp poultry seasoning
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
For the dumplings:
- 1 cup self-rising flour
- ½ cup plain nonfat Greek yogurt
- Pinch of salt and pepper
Instructions
- Cook the vegetables: In a large pot or Dutch oven, heat olive oil (or spray) over medium heat. Add onions, carrots, and celery. Sauté for 5–7 minutes until softened. Add garlic and cook 1 more minute.
- Add chicken and broth: Stir in the chicken, seasonings, and broth. Bring to a boil, then reduce to simmer. Cook for 15 minutes until chicken is tender.
- Make the dumplings: In a bowl, mix self-rising flour and Greek yogurt until dough forms. Knead lightly and divide into 10–12 small dumplings (about 1 tbsp each).
- Add milk and thicken: Stir almond milk and cornstarch mixture into the pot. Simmer for a few minutes until slightly thickened.
- Cook the dumplings: Drop dumplings gently into the simmering soup. Cover and cook for 10–12 minutes (don’t lift the lid!) until dumplings puff up and are cooked through.

Tips to keep points low
- Use zero-point chicken breast and nonfat Greek yogurt for dumplings.
- Choose spray oil instead of 1 tbsp olive oil if you want to save ~1 point per serving.
