Weight Watchers Cozy Chicken & Dumplings

Ingredients

For the soup base:

  • 1 lb (450g) skinless boneless chicken breast, cubed
  • 1 ½ cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups fat-free low-sodium chicken broth
  • 1 ½ cups unsweetened almond milk (or skim milk)
  • 1 tbsp olive oil (or cooking spray)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp thyme
  • ½ tsp poultry seasoning
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

For the dumplings:

  • 1 cup self-rising flour
  • ½ cup plain nonfat Greek yogurt
  • Pinch of salt and pepper

Instructions

  1. Cook the vegetables: In a large pot or Dutch oven, heat olive oil (or spray) over medium heat. Add onions, carrots, and celery. Sauté for 5–7 minutes until softened. Add garlic and cook 1 more minute.
  2. Add chicken and broth: Stir in the chicken, seasonings, and broth. Bring to a boil, then reduce to simmer. Cook for 15 minutes until chicken is tender.
  3. Make the dumplings: In a bowl, mix self-rising flour and Greek yogurt until dough forms. Knead lightly and divide into 10–12 small dumplings (about 1 tbsp each).
  4. Add milk and thicken: Stir almond milk and cornstarch mixture into the pot. Simmer for a few minutes until slightly thickened.
  5. Cook the dumplings: Drop dumplings gently into the simmering soup. Cover and cook for 10–12 minutes (don’t lift the lid!) until dumplings puff up and are cooked through.
  6. Serve warm and cozy! 🥰

Tips to keep points low

  • Use zero-point chicken breast and nonfat Greek yogurt for dumplings.
  • Choose spray oil instead of 1 tbsp olive oil if you want to save ~1 point per serving.
  • Almond milk keeps it creamy but light.
