Peanut Butter Banana Brownies (WW Friendly)

Ingredients

  • 2 medium ripe bananas, mashed
  • 2 tbsp powdered peanut butter (like PB2)
  • 2 tbsp unsweetened cocoa powder
  • ¼ cup unsweetened applesauce
  • 1 egg (or 2 egg whites)
  • 1 tsp vanilla extract
  • 2 tbsp zero-calorie sweetener (like Monk Fruit or Stevia)
  • Pinch of salt
  • Optional: a few sugar-free chocolate chips (adds ~1 point)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper or spray with cooking spray.
  2. In a mixing bowl, mash bananas until smooth.
  3. Stir in peanut butter powder, cocoa powder, applesauce, egg, vanilla, sweetener, and salt until well combined.
  4. Pour mixture into the prepared pan and spread evenly.
  5. Bake for 20–25 minutes, or until the center is set and edges are slightly firm.
  6. Cool completely before slicing into 9 squares.
