1 lb (450g) lean ground turkey (99% fat-free)
1 medium zucchini, grated and excess water squeezed out
1/4 cup whole wheat breadcrumbs
1 egg
2 garlic cloves, minced
1/4 cup onion, finely chopped
1/4 cup fresh parsley, chopped
1 tsp dried oregano
Salt and pepper to taste
Cooking spray or 1 tsp olive oil (optional)
Directions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine all ingredients: ground turkey, grated zucchini, breadcrumbs, egg, garlic, onion, parsley, oregano, salt, and pepper.
- Mix well using your hands or a spatula until fully combined.
- Form into meatballs (about 1 1/2 inches in diameter). You should get around 16 meatballs.
- Place on the baking sheet, leaving space between each.
- Bake for 18–20 minutes, or until fully cooked and lightly golden on top (internal temperature should be 165°F/74°C).
- Optional: Serve with a side of marinara sauce or over zucchini noodles for a low-carb option.
Notes
- These meatballs freeze well — make a double batch and freeze half!
You can swap turkey for ground chicken.
For added flavor, try adding a dash of parmesan cheese (adjust calories accordingly).

I made these turkey zucchini meatballs last night and they were a total hit!
