Chocolate peanut butter mug cake

Ingredients

  • Cooking spray
  • 2 spray s
  • Plain fat free Greek yogurt
  • ¼ cup s
  • Egg
  • 1 large egg s
  • Powdered peanut butter
  • 3⅓ Tbsp
  • Monk fruit sweetener with erythritol
  • 1 Tbsp
  • Unsweetened dark cocoa powder
  • 2½ tsp or regular cocoa powder
  • Baking powder
  • ½ tsp

Instructions

  1. In a medium bowl, whisk together the yogurt and egg until smooth. Stir in the powdered peanut butter, monk fruit sweetener, cocoa powder, and baking powder until well combined.
  2. Coat a 10- to 12-oz microwave-safe mug with cooking spray and spoon the batter into the mug. Microwave on High until the cake rises to the top and is cooked through, 1 to 1½ minutes. Serve immediately.
