This make-ahead salad combines black beans, chickpeas, two colors of corn, bell pepper, red onion, and tomatoes in a sharp white-wine-vinegar dressing. Exact can sizes and a measured dressing replace the ambiguity of an open-ended “no fuss” formula.

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15.25 ounces) yellow corn, drained
  • 1 can (15.25 ounces) white corn, drained
  • 1 can (10 ounces) diced tomatoes with green chiles, drained
  • 2 medium orange bell peppers, diced
  • 1/2 medium red onion, finely diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper

Instructions

  1. Empty the black beans and chickpeas into a colander. Rinse under cool running water, then add both corns and the tomatoes. Drain for 5 minutes and shake away excess liquid.
  2. Place the drained ingredients, bell peppers, onion, and parsley in a large bowl.
  3. Whisk vinegar, oil, mustard, cumin, salt, and pepper in a small bowl until the mustard disperses.
  4. Pour the dressing over the salad and fold until evenly coated. Cover and refrigerate for 30 minutes.
  5. Stir from the bottom before serving. Taste after chilling; add salt only if needed, since canned products vary in sodium.

Drainage and texture

Thorough drainage is the main safeguard against a watery salad. Rinsing removes starchy packing liquid from the beans, while a five-minute rest lets water escape before dressing is added. Dice both peppers to about the size of the beans. Finely diced onion distributes its flavor without dominating individual bites.

The Dijon mustard lightly emulsifies the vinegar and oil. Do not omit it and then increase oil arbitrarily; that changes the dressing balance. White vinegar may replace white wine vinegar, but begin with 3 tablespoons because its acidity can taste sharper.

Substitutions and serving

Frozen corn may replace both canned corns: thaw, drain, and measure 3 cups. Plain diced tomatoes can replace tomatoes with green chiles; add one seeded minced jalapeño if heat is desired. Cilantro can replace parsley. Serve the salad as a side, spoon it over greens, or add it to a grain bowl. Avocado is best added to individual portions just before eating, not mixed into the storage container.

Storage and safety

Keep refrigerated at 40°F or below and use within 4 days. Use a clean utensil each time. At a gathering, return the bowl to refrigeration within 2 hours, or within 1 hour above 90°F. Freezing is not recommended because the peppers and tomatoes lose their crisp texture.

For packed lunches, portion the salad after its initial chill so every container receives both beans and vegetables. Spoon a little settled dressing into each container. If serving it over lettuce, keep the lettuce separate until mealtime; the acidic dressing will soften tender greens during storage.
