Roasted Sweet Potato Cauliflower Rice Bowls

Ingredients

  • 1 pound sweet potato, 1/2-inch cubes
  • 1 tablespoon olive oil, divided

  • 4 cups cauliflower rice
  • 1 can (15 ounces) pinto beans, drained
  • 1 cup salsa verde
  • 1 avocado, diced

Method

  1. Heat oven to 425°F. Toss sweet potato with 2 teaspoons oil, spices, and 1/4 teaspoon salt. Roast 22–28 minutes until tender.
  2. Heat remaining oil in skillet. Cook cauliflower rice 5–7 minutes; add beans, remaining salt, and 1/2 cup salsa. Heat to 165°F.
  3. Divide cauliflower mixture among bowls. Add roasted sweet potato, avocado, remaining salsa, cilantro, and lime.
  4. Serve warm, keeping avocado separate until service.

For meal preparation, portion the cooked cauliflower-bean base and roasted sweet potato into four shallow containers while warm, then cool promptly before covering. Pack salsa, avocado, cilantro, and lime separately. Reheat only the cooked base and potato to 165°F, then add cold toppings. A wide shallow bowl makes the distinct components visible and prevents salsa from pooling under the cauliflower.

Taste the salsa verde before adding optional seasoning because brands vary in salt and heat. Offer lime wedges at the table so each diner can adjust acidity without watering the stored components.
