Chocolate Peanut Butter Ice Cream Parfait

This single-serving peanut buster parfait layers vanilla light ice cream with sugar-free hot fudge, prepared powdered peanut butter, and chopped dry-roasted peanuts. The ingredients are assembled directly in a parfait glass or small bowl and served immediately, so no freezing, baking, or chilling step is required.

Ingredients

  • 1/2 cup Nick’s Vanilla Light Ice Cream
  • 2 tablespoons sugar-free hot fudge syrup, divided
  • 1 tablespoon PB2 powdered peanut butter
  • 1 tablespoon water, for preparing the PB2
  • 1 tablespoon dry-roasted peanuts, chopped
  • Light whipped topping, optional

Instructions

  1. Mix the 1 tablespoon PB2 with 1 tablespoon water until evenly combined.
  2. Spoon half of the vanilla light ice cream into a parfait glass or small bowl.
  3. Drizzle 1 tablespoon of the sugar-free hot fudge over the ice cream.
  4. Add the prepared PB2 mixture as the next layer.
  5. Top with the remaining vanilla light ice cream.
  6. Drizzle the remaining 1 tablespoon hot fudge over the top.
  7. Sprinkle with the chopped dry-roasted peanuts.
  8. Add light whipped topping only if desired, then serve immediately.

Assembly Notes

Measure the full half cup of ice cream before dividing it between the two layers. The same applies to the hot fudge: two measured tablespoons are used across the parfait, one tablespoon at a time. Keeping the ingredients measured preserves the published single-serving structure.

Mix the PB2 and water before beginning the layers so the ice cream does not soften while you stir. Chop the peanuts to distribute their texture across the top rather than leaving only a few large pieces. The optional whipped topping is not included in the measured base formula and should be tracked separately.

Serving and WW Points Note

This parfait is intended to be eaten immediately. If preparation is interrupted, return the ice cream to the freezer and keep the remaining ingredients separate rather than freezing the fully assembled bowl.
