Zero Point Weight Watchers Vanilla Cheesecake

0 points (as promised!) This impressive zero point Weight Watchers vanilla cheesecake recipe is so delicious! Even the family thought it tasted like fresh ricotta cheesecake. I highly recommend it and will definitely make again. Super easy to make and very little culinary skills are required!

Ingredients

  • Cooking spray
  • 4 cups fat-free cottage cheese
  • ⅔ cup monk fruit sweetener with erythritol we love this one!
  • ½ plain fat-free Greek yogurt
  • 1½ tablespoons vanilla extract
  • 3 large eggs
  • 1 cup sliced or chopped strawberries

Instructions

  1. Preheat the oven to 350°F
  2. Coat an 8-inch springform pan with cooking spray; wrap the outside of the pan with foil
  3. In a food processor, blend the cottage cheese until smooth, about 2 minutes, stopping occasionally to scrape down the sides
  4. Add the monk fruit sweetener, yogurt, and vanilla; process until well combined
  5. Add the eggs; process until smooth
  6. Pour the batter into the prepared pan
  7. Bake until the cheese is golden around the edges and still a bit wobbly in the center, 1 hour 5 minutes to 1 hour 15 minutes
  8. Remove the cheesecake from the oven and cool to room temperature
  9. Cover and refrigerate until completely chilled and set, at least 3 hours
  10. Remove the sides of the pan
  11. Cut into 8 slices
  12. Top the cheesecake with raspberries before serving
  13. Serving size: 1 slice
  14. Notes: While we love this vanilla version, you could go in a summery citrus direction by stirring in a tablespoon of lemon zest.
