SW Raspberry & white chocolate muffins

makes 8 good size muffins. 1syn each + hexB

INGREDIENTS:
1 sachet of Quaker super good, superfruits Raspberry & Açai (hexb)
25g of sukrin coconut flour (3.1/2syns)
1tsp of baking powder (1/2syn)
1 tsp of vanilla essence
2tbs of white chocolate skinny syrup or water
2tbs of good quality sweetener (1syn)
5 eggs separated
50g of raspberries (optional) (1/2syn)

8 fresh raspberries
8 white chocolate buttons (2.1/2syns)
And a dusting of icing sugar for your topping.
Sift your coconut flour and baking powder in a bowl. Mix in your Quaker super fruits sachet and then add your vanilla essence, sweetener and egg yolks.
Mix in your skinny syrup or water being sure to mix well.
Use an electric Whisk to whisk your whites until stiff.
Add a spoonful at a time and mix well until you have a workable consistency. Gently fold in the remaining whites.
Then gently fold in your raspberries.
Spoon between into your muffin cases.
Bake in a preheated oven at 180 for 25mins
As soon as you bring them out the oven add one small white chocolate button on top and place a fresh raspberry on once the button starts to melt.
Dust with icing sugar and enjoy x
