Ingredients

  • 16 ounces of fat free cottage cheese
  • 3 eggs
  • 1/4 teaspoon xanthan gum
  • 1 teaspoon vanilla
  • 1/2 cup of sugar substitute
  • 1/2 cup blueberries

Instructions

  1. Blend cottage cheese until smooth
  2. Add other ingredients except blueberries
  3. Mix together until smooth
  4. Fold in blueberries
  5. Divide into 12 cupcake pan
  6. Cook in preheated 350 degree oven for twenty minutes or until lightly browned.
