Ingredients
- 16 ounces of fat free cottage cheese
- 3 eggs
- 1/4 teaspoon xanthan gum
- 1 teaspoon vanilla
- 1/2 cup of sugar substitute
- 1/2 cup blueberries
Instructions
- Blend cottage cheese until smooth
- Add other ingredients except blueberries
- Mix together until smooth
- Fold in blueberries
- Divide into 12 cupcake pan
- Cook in preheated 350 degree oven for twenty minutes or until lightly browned.
