Cream Cheese–Filled Pumpkin Bread
This spiced pumpkin loaf has a continuous cream cheese layer through its center. A thick pumpkin batter supports the filling while a two-stage layering method keeps it away from the pan’s edges, where it could leak or scorch. Cool the loaf fully before slicing so both layers can set.

Ingredients
For the filling:
- 6 ounces block cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
For the pumpkin batter:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon fine salt
- 2 large eggs
- 3/4 cup packed light brown sugar
- 1 cup plain pumpkin purée
- 1/2 cup neutral oil
- 1 teaspoon vanilla extract
Method
- Heat the oven to 350°F/175°C. Grease the loaf pan and line its long sides and base with parchment.
- Beat the cream cheese and sugar until smooth. Mix in the yolk and vanilla just until combined; set aside.
- Whisk flour, baking soda, cinnamon, ginger, nutmeg, and salt. In another bowl whisk the eggs, brown sugar, pumpkin, oil, and vanilla until uniform. Fold the dry mixture into the wet only until no dry flour remains.
- Spread half the batter in the pan. Spoon the filling lengthwise down the center, leaving a 1/2-inch border on every side. Cover gently with the remaining batter.
- Bake 55 to 65 minutes. A tester inserted into the pumpkin portion should show moist crumbs rather than raw batter, and the center should reach at least 160°F/71°C. Cool 20 minutes in the pan, then lift onto a rack and cool completely.
Cues and troubleshooting
Use pure pumpkin purée, not sweetened pumpkin pie filling. Measure flour by spooning it into the cup and leveling it; a packed cup can make the loaf dry. Once flour is added, overmixing develops gluten and creates a rubbery tunnel around the filling.
The filling should be smooth and thick. Cold cream cheese leaves lumps, while melted cream cheese can disappear into the batter. Keeping it centered gives the outer pumpkin batter room to seal. If the top darkens before the center is done, tent loosely with foil for the final 15 minutes. Do not judge doneness through the cream cheese stripe, which remains moist.
Substitutions and storage
Replace up to half the oil with unsweetened applesauce for a softer, slightly less rich crumb. Chopped toasted pecans may be folded into the pumpkin batter. Do not substitute pumpkin pie filling for the purée because its added sugar and liquid change the formula.
Because of the cream cheese center, refrigerate the cooled loaf covered at 40°F/4°C or colder and use within 4 days. Bring individual slices toward room temperature briefly before serving. Freeze wrapped slices for up to 2 months and thaw them overnight in the refrigerator.
