Weight Watchers Lemon Loaf

I hate to break it to you guys, but did you know that one slice of lemon loaf from Starbuck’s is 21 points and 470 calories, 20 grams of fat and 68 grams of carbs! I of course learned that the hard way five years ago when I “guestimated” 8 points and looked it up after I ate it. šŸ¤¦šŸ»ā€ā™€ļø I first made this recipe in 2015, but I tweaked it to useĀ truviaĀ confectioners sugar as the glaze which adds 10 calories to the whole loaf. Winning! This loaf is 8 servings. Each serving is 3 points onĀ #teambluešŸ’™Ā andĀ #teampurplešŸ’œĀ and 4 points onĀ #teamgreenšŸ’š
Ingredients šŸ‹
1.5 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain Greek yogurt
1/2 cupĀ truviaĀ granulated sugar
3 large eggs
2 lemons, zest and juice
1 tablespoon oil

For the glaze: šŸ‹
1/2 cup Truvia confectioners sugar
3 teaspoons unsweetened almond milk
1 teaspoon lemon zest

Instructions šŸ‹
Heat oven to 325.

In a large bowl, mix the flour, baking powder, salt and Truvia together.

In a second bowl, whisk the yogurt, eggs, lemon zest and juice and oil and mix until the eggs are incorporated.

Add the wet mixture to the dry mixture, and using a fork, must mix together until it’s all together. It will be light and fluffy.

Spray a loaf pan with avocado oil spray, pour the batter in the pan, tapping on the counter to get out any air bubbles from the dough and bake at 325 for 35-45 minutes depending on your stove. You’ll know when it’s done when it starts pulling away from the sides.

Let cool in the pan for 15 minutes before completely cooling on a rack. Mix Truvia powdered sugar with the almond milk. Spread over the top of the cooled loaf and let sit 15 minutes to set.

Each slice is approximately 92 calories, 5 carbs, 6 grams sugar, 4 fat, 5 protein.
