Frozen Vanilla Pudding Cookie Sandwiches
Frozen vanilla pudding cookie sandwiches pair a thick yogurt-pudding filling with crisp chocolate wafer cookies. The filling is chilled before assembly so it stays in place, then the sandwiches are frozen until firm. This recipe makes 12 small sandwiches with a clearly measured amount of filling in each.
Ingredients
- 1 package (1 ounce) sugar-free instant vanilla pudding mix
- 1 cup cold 2% milk
- 1 cup plain nonfat Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup thawed light whipped topping
- 24 round chocolate wafer cookies, about 2 inches wide
- 2 tablespoons finely chopped toasted almonds, optional
Equipment
- Medium mixing bowl and whisk
- Flexible spatula and 2-tablespoon scoop
- Parchment-lined quarter-sheet pan
- Covered freezer-safe container
Instructions
- Whisk the pudding mix and cold milk for 2 minutes, or for the mixing time directed on the package if it differs.
- Whisk in the Greek yogurt and vanilla until smooth. Fold in the thawed whipped topping with a spatula.
- Cover and refrigerate for 20 minutes so the filling thickens.
- Arrange 12 wafer cookies flat-side up on the lined pan. Place 2 level tablespoons of filling in the center of each.
- Top with the remaining cookies, flat-side down. Press gently until the filling approaches the edge without spilling out.
- If using almonds, roll the exposed filling edge lightly in the chopped nuts.
- Freeze the sandwiches on the level pan for at least 3 hours. Transfer them to a covered freezer-safe container with parchment between layers.
Preparation Notes
Confirm the pudding package is instant, not cook-and-serve. The two products set differently and cannot be exchanged without changing the method. Milk must be cold so the instant pudding thickens as expected.
Use cookies of similar diameter to keep the filling contained. If they soften during assembly, freeze the finished tray promptly. Microwave thawing is not appropriate because it can melt the filling unevenly.
Substitutions and Allergens
Vanilla wafer cookies can replace chocolate wafers if they are similar in size. Skip the almonds for a nut-free formulation only after checking every packaged label for cross-contact. A plant-based milk is not a direct substitution because some instant puddings do not set reliably with it.
Portioning and Serving
Use the same two-tablespoon measure for every sandwich so the filling freezes at a similar rate and the stated yield remains accurate. Count the cookies before mixing the filling; broken cookies can be set aside rather than leaving an unmatched portion. Serve the sandwiches on a chilled plate if they will sit briefly, because warm dishes soften the dairy filling quickly.
The paper or parchment separators are especially useful when the cookies soften slightly in storage. Lift each sandwich by its cookie edges instead of squeezing the frozen center.
Storage and Serving
Keep frozen in a covered container. Let only the sandwiches being served stand in the refrigerator for 5 to 10 minutes if a softer texture is preferred. Do not repeatedly thaw and refreeze the entire batch. Discard portions left at room temperature for more than two hours.

No points or nutrition figure is assigned. Calculate the exact pudding, milk, yogurt, topping, cookies, optional nuts, and 12-sandwich yield if needed.
