0-Point Coconut Cake (WW Friendly)

0 WW points for the whole cake (using 0% yogurt + sweetener)

đź›’ Ingredients:

  • 3 eggs
  • 200g plain 0% Greek yogurt
  • 2–3 tbsp sweetener (erythritol, stevia, etc.)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Coconut extract (optional, for stronger flavor)
  • Optional: light sprinkle of unsweetened coconut flakes on top

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F)
  2. In a bowl, whisk eggs with sweetener until slightly fluffy
  3. Add yogurt and vanilla, mix until smooth
  4. Stir in baking powder (and coconut extract if using)
  5. Pour into a small greased baking dish
  6. Bake for 25–30 minutes, until golden on top
  7. Let cool slightly before slicing

  • Soft, light, and slightly custardy inside
  • Golden and lightly crispy on top
  • Very airy and satisfying
