Ingredients

  • 3 large eggs, whites and yolks separated
  • 3 ounces mascarpone, softened
  • 1/8 teaspoon cream of tartar
  • 1/8 teaspoon fine salt

Method

  1. Heat the oven to 300°F. Line a light-colored sheet pan with parchment.
  2. Place whites in a completely clean, dry bowl. Beat until foamy, add cream of tartar, and continue until glossy stiff peaks stand upright.
  3. In the second bowl, beat yolks, mascarpone, and salt until smooth.
  4. Fold one quarter of the whites into the yolks to loosen them. Add remaining whites in two additions, cutting down through the center and lifting from the bottom. Stop when only faint white streaks remain.
  5. Immediately form six equal 4-inch rounds on the pan, leaving 2 inches between them.
  6. Bake 23–27 minutes, until evenly golden, dry on top, and at least 160°F in the center. Cool 5 minutes on the pan, then transfer carefully to a rack.

Foam technique

Even a trace of yolk or grease can prevent whites from reaching full volume. Separate each egg over a small cup before adding its white to the mixing bowl. Cream of tartar stabilizes the foam; do not replace it with baking powder. Stiff peaks should hold upright without looking dry or clumpy.

Mascarpone must be soft, not melted. Cold lumps require extra mixing that can deflate the foam. Folding is complete when the mixture is uniform enough to portion but still visibly airy. Letting the batter stand causes volume loss, so shape and bake it immediately.

Cues and serving

Pale, sticky centers need more time. Very dark tops with wet centers suggest excessive oven heat; verify oven temperature with a thermometer. The rounds soften as they cool and are delicate when hot. Use them for small sandwiches only after cooling fully, or serve alongside eggs or soup.

Storage and substitutions

Refrigerate cooled rounds between parchment in a covered container for up to 3 days. Rewarm briefly in a 300°F oven until they reach 165°F; a toaster can tear them. Freeze for up to 1 month and thaw in the refrigerator. Full-fat cream cheese can replace mascarpone by weight but produces a tangier, slightly firmer round. This egg-based bread is not suitable for an egg-free substitution.

Shaping consistency

Set six equal guide circles beneath the parchment before mixing. Portion one spoonful into each circle in rotation, then distribute the remainder; this prevents the first rounds from becoming much thicker. Smooth only the peaks without pressing out air. Similar thickness matters more than perfectly circular edges because it keeps all six centers on the same baking schedule.
