Ingredients

  • Kroger Fat free whipped topping
  • 16 oz
  • PB2 Powdered peanut butter
  • 12 Tbsp
  • Egg s
  • 3 item s (large)
  • Unsweetened applesauce
  • 1/2 cup s
  • Water
  • 11/4 cup s
  • Pillsbury Sugar Free Devils Food Cake Mix
  • as pkged
  • 12 serving s

Instructions

  1. 1 Preheat oven to 325. Blend cake mix, water, eggs, and applesauce with blender. Divide into 72 mini cupcake. Bake for 13 minutes. Fold PB2 powder into cool whip. Pipe into cooled cupcakes.
  2. Notes: I mixed 6 tablespoons into 8 oz of cool whip. That was enough to cover half of the mini cupcakes (36). I froze the other half.  The frosting was 16 oz for cool whip and 12 tablespoons of PB2 for 72 cupcakes. Since I froze half of the cupcakes I cut the frosting in half, 8 oz of cool whip and 6 tablespoons of PB2.
