Balsamic Roasted Pearl Onions

Ingredients

  • 2 pounds fresh pearl onions
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Method

  1. Bring water to boil. Blanch onions 1 minute, drain, cool, and slip off skins. Pat dry.
  2. Heat oven to 425°F and line sheet. Toss onions with oil, vinegar, honey, salt, and pepper.
  3. Roast in one layer 25–30 minutes, turning halfway, until tender through and browned.
  4. Toss with thyme and rest 5 minutes before serving.
