No-Churn Strawberry Yogurt Ice Cream

Ingredients

  • 2 cups strawberries, hulled and diced
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup cold heavy cream
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Method

  1. Cook strawberries, sugar, and lemon over medium 8–10 minutes until syrupy. Cool completely, then chill.
  2. Whip cream to medium peaks. Fold yogurt, vanilla, and salt together, then fold in whipped cream.
  3. Fold in chilled strawberry mixture, leaving visible ribbons. Transfer to chilled loaf pan.
  4. Cover surface directly and freeze at least 6 hours. Stand 5–10 minutes before scooping.

Substitutions
